Oatmeal Chocolate Cherry Cookies



I adore dried cherries. So whenever I see a recipe featuring them, I cut it out and put it in my recipe binder, and even if it doesn't get made for several weeks, months or years... I know I'm going to love it. These cookies are delicious and have a nice balance of flavor between the cherries and the chocolate. The oats make the cookies hearty and the best part? Only 100 calories per cookie!

Start by creaming together the butter and the sugars. Add the eggs and vanilla



beating well after each addition. Add the flour,



baking soda and salt. Then add the oats and mix just until combined.



With a wooden spoon, stir in the dried cherries



and the chocolate chips.



Drop the dough by tablespoonfuls onto cookie sheets



and bake 12-14 minutes or until golden. Cool on a wire rack.

Oatmeal Chocolate Cherry Cookies

1 1/2 cups flour
2 tsp. baking soda
1/2 tsp. salt
3/4 cup sugar
3/4 cup brown sugar
3/4 cup butter, softened
2 tsp. vanilla
2 eggs
3 cups oats
1 cup dried cherries
1 cup chocolate chips

In a small mixing bowl, combine flour, baking soda and salt. Set aside.

In a large bowl, cream together butter and sugars. Beat in vanilla, then eggs; one at a time, beating well after each addition. At low speed, beat in flour mixture gradually. Mix in oats just til combined. With a wooden spoon, stir in cherries and chocolate chips.

Drop dough by rounded spoonfuls onto lightly greased cookie sheets. Bake for 12 to 14minutes at 350 or until tops are golden. Transfer to wire racks to cool. Makes 3 1/2 dozen.
